Often when you order Indian takeaways you are left with lots of leftover rice. This is a great way to use this up for breakfast the next day or dinner the next night.
Ingredients
2 tablespoons oil
1 onion, finely chopped
4 tsp curry powder (the one I had was not very strong you may want to add less and then if it needs more, you can add it later)
1 tin coconut cream
½ cup peas
One handful of chopped parsley
1 ½ tsp salt
Lots of pepper
Optional extras – Boiled eggs, Smoked fish, unsmoked fish, spinach
Method
- Heat a pan to low and add the oil, then add the onion and let it slowly soften and cook. Once it is soft add the curry powder and stir it around for a few minutes.
- Then add the coconut cream and the peas let these simmer until the peas are cooked then add the rice and any optional extras and the salt and pepper.
- Stir these into the sauce until they are warmed through sprinkle over the parsley, and it is ready to serve.
